Our client is a successful restaurant entrepreneur presently operating 10+ full serve restaurants in multiple states. They are ready to spearhead a new, creative, fine dining, full service restaurant start-up division. The Director of Operations must have hands-on restaurant operations and corporate experience in opening new locations from the ground up.


Requirements for the Director of Operations position:

-Multi-unit experience operating fine dining or upscale restaurants in the $5-10 million / year + range

-5 years in a recent role as restaurant Director of Operations, Regional Manager, Vice President, or COO

-Strong P&L expertise

-Proven ability to lead General Managers at multiple locations

-Excellent knowledge in corporate beverage training (craft cocktails / wine program / craft beers)

-Extensive experience opening new restaurants

-Hospitality Business or Business Administration Degree

-Proven track record of success in fine dining restaurants

-Solid knowledge of high-end, scratch culinary operations

-Flexibility to travel to and live in different cities for several months at a time

CHEF / KITCHEN MANAGER

 Chef/Kitchen Manager for Fast/Casual concept with scratch kitchen

 Job Function:

 Primarily responsible for all Food Service Staff and Operations. Primary focus is to maintain efficient fully staffed kitchen and provide excellent Customer Satisfaction through Quality and Customer Service. Maintain a profitable kitchen in a clean and safe environment. Creates an atmosphere of a Culinary Level of detail within Key Management and Team Leaders. Customer Satisfaction is job one!

 Responsibilities:

  •  Directly responsible for hiring and developing prep and service culinary staff including hot line          cooks, salad and sandwich and pizza teams and works in a “hands on” style.
  •  Sets Production Schedules based on Sales forecast for both in-house and catering demands           while paying attention to any labor savings opportunity.
  •  Maintains proper inventory control including appropriate levels, freshness, product use dates and overall organization and cleanliness of our dry storage and                              refrigeration areas.
  •  Responsible for oversight of all daily, weekly and monthly inventory numbers and placing all weekly food orders. Oversees quality of supplies received and invoices. 
  •  Maintains proper communication with vendors.
  •  Enforces all Product and Plate Presentation Standards.
  •  Takes the lead in the training of key kitchen management team in the area of foodservice skills and culinary detail. Assists in semi-annual reviews.
  •  Plays key role in managing food cost though line audits, inventory control and daily supervision of all food service staff.
  •  Sets up all managers and supervisors to work within a cross-functional management team in order to reduce variable labor cost particularly during the “off rush” hours.
  •  Assists Kitchen Manager in establishing excellent Employee Morale by taking a hands-on approach to all Food Service Employees.
  •  Maintains updated recipe book for all departments and food cost models.
  •  Oversees the maintenance of a safe, secure and healthy work environment by establishing and enforcing standards in compliance with local and State Health                            Regulations and Requirements.
  •  Maintains all foodservice equipment by following operating instructions and training staff on proper usage.

 Additional Responsibilities:

  •  Schedule weekly and monthly employee standard training classes and meetings.
  •  Prepares semi-annual reviews for direct staff members while assisting our Assistant Kitchen Managers in reviewing key Line Leaders development.
  •  Provide recommendation for menu improvements through General Manager’s approval.
  •  Surprises and delights our customers through creative new items that fit with our menu, our time standards and staff.
  •  Maintain impeccable personal hygiene and set uniform and hygiene standards for department.
  •  Keep all kitchen areas clean and highly organized.
  •  Provide hands on catering service from time to time.

 Key Skills Required:

  •  Exceptional sensory and culinary skills with exceptionally high food standards.
  •  Extensive training in all areas of food preparation, purchasing, inventory, quality control and handling & storage. Excel and when to manage training strongly                              recommended.
  •  Ability to work well within a cross functional management team.
  •  Ability to connect with all Food Service part and full time employees and create an atmosphere of learning and continuous improvements.
  •  Proven to have excellent problems solving skills.

 5 days week, 50 hours/week, $55,000-$65,000 plus bonus ,

7am to 5pm, 3 days, 10am to 8:00pm, 2 days. Off Sunday.
