Must have complete understanding of scratch made dessert recipes and process as well as bread starters and fermentation.

Required Experience:

  • Preparing a variety of patisserie, artisan breads, and other dessert items in a high-volume production environment (3,000 - 4,000 pounds of dough / day)
  • Managing high-volume production of scratch-made artisan breads like French bread, whole wheat bread, sourdough, rye bread, Italian bread, etc. in a non-fully-automated bakery
  • Overseeing a 24/7 operation
  • Handling inventory and purchasing for flour, sugar, and other items used in the pastry department
  • Ensuring quality and sanitation of material and equipment used in pastry making
  • Training and developing production staff
  • Identifying staffing needs and helping recruit and train talented bakers and pastry personnel

Our client is a very successful full-service restaurant company that is moving into a beautiful new corporate office in Troy. The ideal candidate has an Accounting Degree, combined with a dynamic personality and great communication skills to facilitate conversations with key staff in the field.

Desire a competent, trustworthy Accountant to handle a wide variety of responsibilities. Will be involved with all closing processes and reconciliations (month-end, quarterly and annual).

The Staff Accountant will:

· Prepare general ledger reconciliations and month end procedures

· Monitor bank reconciliations, third-party receivables and weekly sales information

· Provide support with payroll processing, accounts payable, receivable

· Help supervise accounting policies and procedures along with internal controls

Requirements include:

· Bachelor’s degree in Accounting or Finance

· At least two years of related experience

· Ability to prepare journal entries and statement of account reconciliations

· Solid knowledge in GAAP accounting and financial reporting

· Advanced proficiency in Microsoft Excel

· Previous experience with applying and maintaining strong internal controls

· Restaurant/Food Cost Accounting is advantageous but not mandatory
